Situated at the heart of the Massif des Maures,
Château Cavalier takes its name from the
flowing-stream through the property.
Pierre
Castel first fell under the spell of Château
Cavalier and its vineyards in the year 2000.
With unerring boldness and conviction,
he has spared no effort in making the Château, which
produces only rosé wines, one of the region’s top
names.

OUR WINES
CHÂTEAU CAVALIER GRAND CAVALIER
CÔTES DE
PROVENCE AOC
From a gravel and sandy clay, Grand Cavalier is a
very elegand wine. Following grapes are used in
making this rosé: Syrah, Rolle, Grenache and
Cabernet-Sauvignon.
The nose is powerful
with aromas of red berry fruit and citrus. Good
elegance on the palate, with an ever more complex
aromatic palette: notes of spice are added to the
floral, citrus and red fruit flavours.
Balanced structure with plenty of
finesse, persisting with freshness and a mineral
edge. It is best served at 10-12° and is the perfect
companion to baked turbot, fresh and cooked fennel,
grilled langoustines with citrus butter.
CHÂTEAU CAVALIER - CUVÉE MARAFIANCE
CÔTES DE
PROVENCE AOC
Cuvée Marafiance has a pale pink color with a
glimmer of blue. Plenty of finesse, the nose is very
complex: first nose shows notes of citrus and red
fruit and second nose develops floral, spicy aromas.
Elegant on the palate with aromas of red
fruit and citrus, developing floral and mineral
notes. Aromatic and complex on the finish with good
tautness.
Best served at 10-12° with
baked asparagus, hummus, savoury parmesan mousse,
baked fillet of John Dory, rack of veal en croute.

THEN WE WOULD LIKE TO INTRODUCE YOU TO OUR PROVENCE FROM MAISON CASTEL…
We thought our Côtes de Provence to be the reflect
of this sunny area of Provence and also of its
soil’s personality.
To reach the
expected quality, we made plot selection on the
seafront, at the foot of the Sainte Victoire
Mountain and on the Varois hinterland. We also
harvested at night in order to preserve the
freshness of the grapes and avoid any oxidation.
The result is a pale pink robe with
bluish tints, for a tasting offering delicate notes
of red berries with a lovely citrus freshness. Ideal
with white meat, grilled fish or exotic cuisine.
Serve
well chilled.

MAISON CASTEL CÔTES DE PROVENCE AOC
We thought our Côtes de Provence to be the reflect
of this sunny area of Provence and also of its

VALESTREL - CÔTES
DE PROVENCE AOC
Produced in the gentle sunshine of its
Provençal home, Valestrel Côtes de Provence is made
from a specially chosen selection of the region’s
classic grape varieties.
A well-balanced
wine – generous, full of flavour and deliciously
refreshing. Highly appealing in colour; fresh and
vibrant with delicate notes of citrus and red berry
fruits.
Serve as an aperitif with a
selection of tapas; also pairs well with grilled
meat, fish and salads. Serve chilled, between 8 and
10˚C.
AIMÉ ROQUESANTE - CÔTES DE PROVENCE AOC
From the heart of the Provence countryside comes
Aimé Roquesante, a skilfully crafted, elegant and
bright Côtes de Provence. Made from traditional
Provençal grape varieties, Aimé Roquesante draws on
the region’s rich soils and abundant sunshine for
its finesse and character.
This is a
clear, vibrant rosé with coral pink highlights and
an intense, fruit-driven nose of red berries and
grapefruit.
A good balance of freshness
and fruity flavours on the palate leads to a
delicately spiced finish. Pairs beautifully with
white meats, fish and shellfish – or serve as an
aperitif with vegetable tapenade.
Serve
chilled, between 8 and 10˚C.
ST SAGNOL COTEAUX VAROIS EN PROVENCE - CÔTES DE PROVENCE AOC
St Sagnol is like the hilltop villages of the
Coteaux Varois, an authentic and generous wine.
Thanks to its terroir the wine finds its
typical Provencal aromatic wealth and freshness.
Perfect served as an aperitif and a
ideal partners to salads, fish dishes and fruit
desserts.
Serve between 8° to 10°C.
MASFLEUREY - CÔTES DE PROVENCE AOC
Masfleurey is a fresh, fruity Côtes de Provence,
clear and bright in colour with a hint of salmon
pink.
Elegant floral aromas lead to an
ample, powerful palate with a delightful range of
berry fruit flavours.
Masfleury is a
natural match for Mediterranean cuisine, and also
pairs well with spicy foods.
Serve
chilled, between 8 and 10˚C.
LES CALANDIÈRES – IGP MEDITERRANÉE
Les Calandières comes from established vineyards
close to the Mediterranean, and it is under these
beautiful sunny skies that the wine finds its
delicate freshness and elegance.
This
wine has a delicate pale pink color with fresh berry
fruit aromas at the nose. It revels on wonderful
crisp strawberry and red berry notes on the palate
with hints of cherry fruit.
Delicious as
an aperitif and a perfect partner to salads,
barbecue and fruit desserts.
Serve
between 8° to 10°C.
